HOMEMADE GRANOLA ON SKYR WITH BLUEBERRIES – a healthy and delicious breakfast or when you just need something to eat… You can eat it on Icelandic SKYR, Greek yoghurt etc. In our house we also eat it on oat meal porridge or as a healthy snack. You blanch almonds and put them in cold water for 2-12 hours. It makes the almonds taste soft and mild. Pumkin seeds, lin seeds and oat meal – it tastes so good together with BLUEBERRIES, banana or what ever fruit or berries you like. White chocolate sweetens the GRANOLA – or use blond DULCEY chocolate from Valhrona. Enjoy! INGREDIENTS: 1 cup oat meal; 1 cup almonds, blanched, chopped; ⅓ cup lin seeds; ⅓ cup pumpkin seeds; ⅓ cup dessiccated coconut; ⅓ cup liquid honey; 1 table spoon vanilla extract; ⅓ cup white chocolate, chopped (or DULCEY blond chocolate from Valhrona).
PROCEDURE: Blanch almonds. Put them in cold water for 2-12 hours. Chop almonds. Chop white chocolate. Prepare cookie sheet. Preheat oven to 150° C (traditionel) / 350° F. Into large bowl mix oat meal, lin seeds, dessicated coconut, pumpkin seeds and chopped almonds. Add liquid honey and vanilla extract. Stir in mixture and mix well. Bake GRANOLA 20 to 25 minutes until lightly browned at 150° C/350° F (traditionel) in oven. When you take GRANOLA out of oven and it is still warm – spread white chocolate on GRANOLA. Cool GRANOLA completely off before storing. Store GRANOLA in tightly covered container. Serv GRANOLA ON SKYR WITH BLUEBERRIES AND BANANA or other fruit and berries.
